At Bella the underlying philosophy is to produce natural sparkling wines of exceptional quality and although we are pioneers in the development of “pet-nats” and “trad-nats” we don’t want to lose sight of the tradition and craftsmanship that has evolved over centuries in Champagne, France.

Utilizing one of the principal Champagne grapes, Chardonnay, we follow the traditional rules closely for our reserve program.  In order to be declared a vintage Champagne, 100% of the grapes must come from that vintage year and must spend a minimum of three years of aging.  There are no specific regulations about how long it must spend on the lees, but the premier Champagne houses keep their wines on lees for upwards of five to ten years.  Our reserve traditional method sparkling wines (two fermentations) are hand bottled, aged laying on their sides, and then riddled for three weeks prior to disgorgement.  We prefer a brut natural style, no dosage added, at this time as the natural acidity in our fruit keeps the juice fresh and requiring no adulteration in flavor.

2011 reserve brut nature – oliver west side

THE VINEYARD AND HARVEST

This was our very first vintage and we sourced Chardonnay from Secrest Mountain Vineyards, on the west side of Oliver BC.  The 2011 vintage had a late start followed by a wet spring and a cooler than usual summer.  Fortunately a warm fall rescued the vintage.  Even at the low yield of 2.7 tonnes to the acre it still took until September 29th, 2011 to reach our target 19.4 brix.  The fruit was whole cluster basket pressed and initially fermented in stainless steel tanks.  After one month 69% was put into three year old barrels for twelve weeks with occasional lees stirring.  There was no malolactic fermentation and the juice was hand bottled at the beginning of March 2012.

2012 reserve brut nature – oliver west side

THE VINEYARD AND HARVEST

Again we sourced Chardonnay from Secrest Mountain Vineyards, on the west side of Oliver BC.  The 2012 vintage was wetter than normal. The moisture meant more leaf growth and a good bud break allowed for a bountiful harvest.  Yield was kept lower than average at 3.3 tons an acre and harvest started September 22nd, 2012 at 19.9 brix.  The fruit was whole cluster pressed and initially fermented in stainless steel tanks.  After one month 29% was put into three year old barrels for six weeks with occasional lees stirring.  There was no malolactic fermentation and the juice was hand bottled at the beginning of January 2013.

2013 reserve brut nature – oliver west side

THE VINEYARD AND HARVEST

Again we sourced Chardonnay from Secrest Mountain Vineyards, on the west side of Oliver BC.  The 2013 vintage was hotter and more humid than previous years.  We harvested three weeks earlier than 2012 due to the high heat and lack of rainfall in peak of summer.  Yield was kept lower than average at 3.0 tons and harvest started September 4th, 2013 at 17 brix. The fruit was de-stemmed and pressed before being fermented in stainless steel tanks.  There was no malolactic fermentation and the juice was hand bottled at the beginning of November 2013.
